Bessinger’s weighs buffet’s fate, bourbon bar

michael besieger bbq Under the rules of Rotary International, a member who misses a meeting is obliged to attend another Rotary group’s get-together. And around Charleston, there is no make-up meeting more popular than the Thursday lunch gathering of the St. Andrews Rotary Club, which meets at Bessinger’s Barbecue.

The truant Rotarians come, admittedly and unapologetically, for the buffet, which is otherwise open only on the weekends. Hotel pans, running more than a dozen across and sometimes as many as three deep, contain a crash course in old-timey Southern cookery: smothered chicken, fried chicken, collard greens, mac-and-cheese, fried catfish, squash casserole, hash and rice vie for plate space in advance of the ribs and pulled pork. “Our recipes are generations old,” owner Michael Bessinger says. “It’s not something we Google.”
